Oatmeal Custard Parfait in under 20 minutes

Over the past few weeks, I had been craving for a banana oatmeal parfait which I relished while at work. And with work from home, I intended to make it but kept pushing it because I couldn't go out and buy stuff.

My dad ran a few errands yesterday and happened to bring home a couple of fruits and the Weikfield Custard powder which I must admit has been a family favourite for years.

While I finally began prepping to make my oatmeal parfait, I decided to take it up a notch and make an oatmeal custard parfait sounds like a sugar rush... Well oops! I missed adding... this is a sugar-free recipe... sounds weird? Trust me it tasted brilliant...

This can be consumed just as a custard or if you want a healthy take on it, go ahead with the oatmeal.

While eating healthy is something each of us should practise we often tend to connect healthy eating with the ideology of tasteless food and giving up desserts. Not anymore... let's bust the myths around healthy desserts and save our pockets from the hole due to expensive sugar-free desserts.

Prep Time: 10 minutes

Cooking time 10 minutes

Total Time: 20 minutes

Ingredients: For the Custard

Milk: 500ml, Wikefield Custard Powder: 5 teaspoons full (for a firm custard), 3 teaspoons full (for a runny custard), Fresh fruits: whatever you like (except watermelon and papaya), here I added, Bananas-2, Apples- 2, Oranges-1, Raisins ( optional) - 15 - 20, Almonds (optional): 10


Ingredients for the oatmeal mix

A cup of rolled oats (about 15 teaspoons)

Yoghurt: 8 Tablespoons

Milk: 10 tablespoons


Instructions

First, in a pan, get the milk boiling and on the other hand in a bowl add oatmeal, yoghurt and milk, give it a good mix and leave it to soak.

Meanwhile, chop up the fruits into small cubes, dry roast the almonds if you like the flavour or just chop them roughly.

In another, bowl add the custard mix with about 6 teaspoons of milk to get a runny consistency, and then add this mixture very slowly to the boiling milk while continuously stirring on low flame.

Continue stirring the custard for about 3-4 minutes on low flame. Turn it off and leave it to cool down.

Once the mixture has cooled, set aside some of the custard for the oatmeal parfait. To the rest add in the chopped fruits, nuts and honey (again optional if you are looking for some sweet).

You could relish the custard as is if you are not fond of oatmeal.


Getting to the Oatmeal Custard parfait: For those going that extra mile, layer your bowl with banana followed by a layer of the soaked oatmeal and follow it up with a generous serving of the custard followed by fruits creating as many layers as your container would allow you to.

Garnish with fruits, and honey and leave it to set in the fridge for about 20 minutes.

If you wish to you could consume it immediately.
